Food is everywhere…shopping malls, television, radio and in magazines….there are tv cooking shows and even competitions that focus on food. Our senses are assaulted by the growing increase in fast and convenience food chains. We forget the pleasure of enjoying the luxury of an authentic home cooked meal. My food philosophy is that whatever you eat should create a memory and sometimes it should be a little like time travel…taking you back to when you were a child, when you were eating hot roti of my mom’s griddle pan or thava as it is called traditionally. There can be no good food without love. My greatest and most vivid memories are linked to food….the aromas, textures and the feelings around the meals prepared. I always say, that in our stressful lives, ‘Home cooked food is our only luxury!’
There are stories I could tell around every recipe….and its these memories that keep the food philosophy alive at Holi Cow. My grandmother and mom cooked with complete devotion…we were not wealthy and could not afford blunders. Fancy and expensive ingredients were never a part of our rather tiny pantry cupboard but what these ladies lacked in extravagance, they more than made up for with the love the put into the dishes they prepared.
Dining around Jozi and sometimes even around South Africa, the food that I ate was nothing like what I had eaten growing up. I began to ask myself why this was so….I opened my first restaurant in 2002 and found it almost impossible to train Indian chefs….firstly, it was a man/woman thing and then there was also the commercial way restaurant food was prepared. I was completely disenchanted by food preparation and it was almost like the food lost it’s ‘magic’ temporarily. It was back to the drawing board and I was faced with the challenge of either training staff or cooking the food myself. I loved every minute of it….and cooked my way through almost all of my third pregnancy…it was exhausting but truly rewarding. My restaurant days passed and it was many years later that Holi Cow came about….a completely different food concept where we bring you our house specialities made with the greatest care and our secret ingredient….love and lots of it!
